Cultural events
Pyrgos Kallistis, located in the center of Santorini, is one of the island’s main cultural and religious hubs. The village is known for preserving traditional customs and hosting events that reflect both faith and local identity. The most famous is the Good Friday celebration during Orthodox Easter, when the entire settlement glows with thousands of candles and lanterns placed on rooftops and walls. This unique illumination transforms Pyrgos into a sea of light and attracts visitors from all over the island. The Feast of Prophet Elias on 20 July is held at the monastery above the village, combining religious observance with social celebration, including food, music, and traditional dancing. On 6 August, the Festival of the Transfiguration of the Saviour is marked by a local panigiri, and on 15 August, the Feast of the Dormition of the Virgin Mary brings together the community for services, processions, and communal meals.
Beyond its festivals, Pyrgos supports cultural life through institutions such as the Estia Pyrgos Kallistis Cultural Association, founded in 1949, which organizes theatre and dance performances, exhibitions, lectures, and educational events. The Cultural Village “Santorini of the Past” presents traditional life through museum exhibits, wine-making demonstrations, and gastronomy workshops. The Pyrgos Ecclesiastical Collection displays icons, manuscripts, and vestments from the 17th and 18th centuries, illustrating the spiritual and artistic heritage of the island. Another cultural site, the “Vanishing Santorini” exhibition, recreates scenes of everyday life in older times using photographs and life-size figures.
Together, these events and institutions make Pyrgos a living symbol of Santorini’s cultural continuity, where faith, art, and community remain deeply connected through both celebration and preservation.
Traditional Food
Pyrgos Kallistis, like the rest of Santorini, maintains a rich culinary tradition deeply tied to the island’s volcanic soil, climate, and agricultural history. Local food in Pyrgos reflects simplicity, strong flavors, and the use of local produce. The village is known for its fava, a smooth puree made from yellow split peas grown on the island for centuries. It is often served with onions, olive oil, and lemon, sometimes topped with capers or caramelized onions. Another signature dish is tomatokeftedes, tomato fritters made with Santorini’s small, sweet tomatoes mixed with herbs and fried in olive oil. The volcanic soil gives these tomatoes their distinct flavor. Eggplant and zucchini fritters, known as kolokithokeftedes, are also common, seasoned with mint and cheese.
The local white eggplant, unique to Santorini, is used in many recipes such as melitzanosalata, a smoky eggplant dip, or baked with tomato sauce and cheese. Capers, grown wild across the island, appear in salads and sauces, adding a tangy, salty touch. Another traditional dish is psarosoupa, a fish soup often made with grouper or scorpionfish, flavored with lemon and vegetables. The island’s bread and rusks are made with barley or chickpea flour, often paired with local cheeses and olives.
Santorini’s wines are an essential part of Pyrgos’s gastronomy. The village is close to several vineyards producing Assyrtiko, a crisp white wine with a mineral character shaped by volcanic soil. Vinsanto, a sweet dessert wine made from sun-dried grapes, accompanies desserts or cheeses. Traditional sweets include koufeto, made with honey and almonds, usually served at weddings, and melitinia, small pastries with cheese and mastic prepared for Easter.
In Pyrgos, many family-run tavernas and small wineries continue to cook with the same ingredients and techniques passed down for generations, making the village a center of authentic Santorinian culinary heritage.
Additional Location Information
Pyrgos Kallistis is a traditional settlement located near the geographic center of Santorini, approximately seven kilometers south of Fira, the island’s capital. Built on a hill, it offers panoramic views of the caldera, the Aegean Sea, and the surrounding vineyards and plains. The village stands at an altitude of about 350 meters, making it one of the highest inhabited points on the island. Its position allowed it to serve as a strategic location for defense and communication in earlier centuries.
Historically, Pyrgos was the capital of Santorini until the early 19th century, before Fira assumed that role. The settlement dates back to the medieval period and developed around its Venetian castle, known as Kasteli, which was one of five fortified settlements built on the island during the time of Venetian rule, beginning in the 13th century. The castle’s narrow, winding alleys, arched passageways, and compact houses were designed for protection against pirate raids. Parts of the fortification and its towers remain well preserved, and many homes still display the architecture of that period.
The area surrounding Pyrgos is dominated by vineyards and lies close to Mount Profitis Ilias, the island’s highest peak at 567 meters. On its summit stands the Monastery of Profitis Ilias, founded in 1711, which historically played an important role in education, local administration, and the preservation of manuscripts. The region’s volcanic soil and dry climate have shaped its landscape and vegetation, with native plants such as thyme, capers, and oregano growing among the lava stones.
Today, Pyrgos remains one of the best-preserved traditional villages of Santorini. It has been designated a protected settlement, ensuring the conservation of its medieval structure, neoclassical houses, and Byzantine churches. Its central location and elevated position make it a key point from which to explore both the inland and coastal parts of the island.
