Pyrgos Kallistis, like the rest of Santorini, maintains a rich culinary tradition deeply tied to the island’s volcanic soil, climate, and agricultural history. Local food in Pyrgos reflects simplicity, strong flavors, and the use of local produce. The village is known for its fava, a smooth puree made from yellow split peas grown on the island for centuries. It is often served with onions, olive oil, and lemon, sometimes topped with capers or caramelized onions. Another signature dish is tomatokeftedes, tomato fritters made with Santorini’s small, sweet tomatoes mixed with herbs and fried in olive oil. Pyrgos Kallistis is a traditional settlement located near the geographic center of Santorini, approximately seven kilometers south of Fira, the island’s capital. The village stands at an altitude of about 350 meters, making it one of the highest inhabited points on the island. Its position allowed it to serve as a strategic location for defense and communication in earlier centuries.
Historically, Pyrgos was the capital of Santorini until the early 19th century, before Fira assumed that role. The settlement dates back to the medieval period and developed around its Venetian castle, known as Kasteli, which was one of five fortified settlements built on the island during the time of Venetian rule, beginning in the 13th century. The castle’s narrow, winding alleys, arched passageways, and compact houses were designed for protection against pirate raids. Parts of the fortification and its towers remain well preserved, and many homes still display the architecture of that period.
