Another signature dish is tomatokeftedes, tomato fritters made with Santorini’s small, sweet tomatoes mixed with herbs and fried in olive oil. The volcanic soil gives these tomatoes their distinct flavor. Eggplant and zucchini fritters, known as kolokithokeftedes, are also common, seasoned with mint and cheese. The local white eggplant, unique to Santorini, is used in many recipes such as melitzanosalata, a smoky eggplant dip, or baked with tomato sauce and cheese.
